Introduction

Ingredients

    2.5 links Jennie-o Sweet Italian sausage
    1/4 tsp crushed red pepper flakes (or to taste)
    1T EVOO
    1 large diced white onion
    2 - 3 large garlic cloves, chopped
    2 cans chicken stock
    2 - 3 chicken stock cans water
    1 cup fat free half and half
    2 lb sliced Russet potatoes, or about 3 large potatoes
    2 small bunches of kale ( about 8 oz)

Tips

Slicing the potatoes on a mandolin makes quick easy work of this recipe. To prepare kale, strip off tough stems, sash thoroughly and roughly chop.


Directions

Sauté Italian sausage and crushed red pepper in a large pot. Refrigerate while you prepare other ingredients. In the same pan, saute onions and garlic in EVOO over low-medium heat for approximately 5 mins. or until the onions are soft. Add chicken stock and water to the pot and heat until it starts to boil. Add the sliced potatoes and cook until soft, about half an hour. Stir in the sausage and the kale,cook for about 5 minutes.
Add the half and half and just cook until thoroughly heated.
