Ingredients

2 cups spinach
1 cup cherry tomatoes (I used sweet yellow instead of red)
1-2 roma tomato or small round tomato
1/3 cup feta cheese
Salt
Pepper (fresh ground if possible)
Parmesan cheese (sprinkle)
Dressing:
Olive oil (~2 tsp)
Balsamic vinegar (1 tsp)
Red wine vinegar (1 tsp)
Zesty Italian Dressing (1/2 tsp)
Tips
This is just a basic layout for a fresh, light salad. Very versatile and changeable to your taste.
Directions
Cut cherry tomatoes in half and chop large tomatoes into chunks. Put tomatoes in large/medium bowl and generously salt and pepper to taste. Cut spinach leaves into preferred size pieces and add to tomatoes. Add feta cheese.
In a separate bowl, mix dressing together. Combine olive oil, balsamic vinegar, red wine vinegar, and italian dressing. All amounts for the dressing are to taste and you can do with them what you want. Add salt and pepper to the dressing.
Mix in preferred amount of dressing with the salad. Add sprinkled parmesan cheese and adjust dressing/seasonings to taste.
