Ingredients

    2 Cups White Self raising flour
    2 Cups wholemeal Self Raising flour
    1/2 cup Low GI Sugar + 2 tablespoons
    2 Eggs
    150gm unsalted butter
    1 tablespoon grated orange peel
    1/2 cup freshly squeezed grapefruit [juice]
    1 cup freshly squeezed orange [juice]
    OR 1 cup brandy and 1/2 cup juice of your choice
    375gm mixed dried fruit [homebrand]
    1/4 cup mixed fruit and nuts [dried apple, dates, sultanas, apricots, peaches, almonds
    1/2 cup glace cherries
    1/2 cup cranberries [craisins]

    icing sugar to dust

    cake tin greased with olive oil.

Tips

* Generally I like using wholemeal flour in my cooking, but whenever I made cakes or muffins with wholemeal previously they always came out hard. So I usually find it best to go half and half.

* I also used Low GI sugar in this recipe but you can substitute whatever sugar you want in this recipe, whether it be brown sugar, raw sugar, Spenda, Stevia or just plain old regular sugar just be careful of the amount you add. [Brown sugar and Splenda sugar are usually more sweet then other sugars so I'd recommend adding the sugar slowly and then tasting the batter, and then adding more sugar, according to taste.

* Originally I used 1 cup of juice [1/2 grapefruit and 1/2 orange] but the batter was too dry, so I found I had to add an extra 1/2 cup of juice. The juice can be substituted with 1 cup of brandy and 1/2 cup of juice...

Directions

Add the four cups of *flour* together and mix. Add in the grated orange peel and melted butter. Mix with wooden spoon. Add the two eggs and mix with wooden spoon slowly. Add the mixed fruit and the mixed fruit and nuts to the bowl along with the brandy and juice/s. Add in the 1/2 cup of *Low GI sugar*. Mix batter with the wooden spoon gently. Lastly add the 1/2 cup of glace cherries and the 1/2 cup of cranberries and mix batter together.

Pour cake batter into a round cake tin greased with 1 tablespoon of olive oil and bake at 150 degrees for at least 40mins or until a skewer inserted comes out clean.

Cool cake for 2 hours and dust with icing sugar.
