Introduction

Quick, simple, tasty and easy frittata. Quick, simple, tasty and easy frittata.
Number of Servings: 8

Ingredients

    2 carrots finely chopped
    1 onion finely chopped
    1 red bell pepper chopped
    100g bacon chopped
    2 cloves of garlic crushed
    6 fresh eggs beaten
    salt & pepper to taste

Tips

I often add garlic salt to the eggs as I beat them - that gets nice taste in there.

You can also use any other veg and stuff - the mechanism is the same. Experiment and have fun.


Directions

I a none stick cooking pan with a lid...
Heat oil over a low heat
Add carrots, garlic & onions and fry for a few minutes.
Add bacon & bell pepper and fry for a further 8 minutes.
Add beaten eggs and stir quickly to distribute mixture through eggs.
Leave on low heat with lid on pan for 10 mins until set.
Remove from heat and leave a few more minutes to make sure all is set.
Turn out onto plate and cut into 8 slices.
Serve warm or cold as meal or as snack.
