Ingredients
-
6 cups Quaker oats
2 cups Creamy Peanut Butter
3 Cups Sugar
2 sticks of butter (I used salted) It wouldn't matter.
1/3 c. cocoa powder
1 cup milk (I used 2%)
4 tsp. Vanilla flavoring (imitation is fine)
Directions
Beforehand, in a large bowl, mix oats and peanut butter until oats are completely coated. I use my hands and mix all large chunks out.
Prepare a large counter or several cookie sheets with foil or saran wrap.
Mix all except oats, peanut butter, and vanilla in a large heavy-duty stock pot. Cook until a low boil on medium heat. Add vanilla. cook until shiny about 6 minutes stirring often. It's ready when you drop one drop into 1/2 c. of cold water and the drop sinks, but holds together.
Add oats and peanut butter mix to the chocolate mix. Stir all together. Remove from heat. Be quick about spooning mixture out onto prepared surface. It hardens quickly! Let cool. Store in airtight containers.
I dip out a heaping tablespoon at a time. It makes about 6 dozen cookies.
Serving Size: 18 servings of 4 cookies each (72 total one tbsp. cookies)
