Ingredients

    1 cup Arrowhead Mills Gluten Free All Purpose Baking Mix
    1/4 cup Bob's Red Mill Gluten Free Biscuit & Baking Mix
    1/4 cup Maseca Corn flour
    1/4 Bob's Red Mill Gluten Free rolled oats
    1/3 cup sugar
    2 tsp baking powder
    1/4 tsp salt
    1 egg beaten
    3/4 cup So Delicious Unsweetened Coconut Milk
    1/4 cup Spectrum Organis butter flavor shortening

Tips

Variations- in place of the chocolate chips-
add 3/4 cup fresh or frozen blueberries


Directions

*Mix all the flours/mixes and oats together with the baking powder, sugar, & salt
*cut in shortening to make a fine crumbly mixture
*add egg and coconut milk, stir until they are just cimbined together
*Divide evenly between 12 muffin cups in a muffin pan or you can shape these into scones and place on a parchment covered baking sheet
*bake for 18-20 minutes until tops are golden brown
