Ingredients

    1 lb. Chicken
    2 Cups Frozen stir fry vegetables
    8 oz. can pineapple (save Juice)
    1/2 cup Sweet & sour Sauce
    1/4 cup water
    2 cups cooked rice

Tips

Instead of stir fry vegetables I sometimes use frozen peppers and onions or other frozen vegetable blend. Brown rice can be used in place of white rice.


Directions

Cut chicken into chunks. Cook in skillet or bake in oven. In sauce pan, add vegetables, pineapple, sweet & sour sauce and water. Bring to boil and boil for 5 minutes. Mix 2 tbls. cornstarch with pineapple juice. Mix with vegetables and cook for 1 more minute. Serve over rice.
