    cup of soy milk, plain and preferably unsweetened
    3/4 cup canola oil
    teaspoon of apple cider vinegar
    teaspoon of agave
    teaspoon of kosher salt
    tablespoon of fresh lemon juice
    zest from 1/8 of an organic lemon
    1/8 teaspoon of dry mustard


If it does not thicken up, add a touch more vinegar.


Put everything in the blender and process until it is thick.
