Ingredients

    1 pkg Cattelli Bistro Spinach Fettuccine (Or Fresh Spinch Fettucine is better)
    10 ml or 2 tsp vegrtable oil (I used olive oil)
    250g or 1/2 lb of ground chicken (I used extra lean ground turkey)
    1.5L or 6 cups bok choy, stem thinkly sliced and leaves chopped
    375ml or 1.5 cups canned craysh tomatoes ( I used fresh tomatoes, diced)
    125 or 1/2 Sweet Tahi Chilli Sauce
    30ml of 2 tbsp fresh lime jiuce
    30ml or 2 tbsp sodium reduced soy sauce
    15ml or 1 tsp miced ginger
    15ml of 1 tsp garlic
    75ml or 1/3 cup each of chopped green onions and toasted cashews (optional)
    Cooked Shrimp (optional)

Directions

Cook fettucine according to directions on package, drain well. Meanwhile, heat vegtable oil in a large frying pan or wok set over med-high heat. Crumble in Chicken or turkey; stry-fry until browned. Stir tomatoes with chilli sauce, lime juice, soy sauce, ginger and garlic and shrimp. Sitr in bok choy. Stir-fry for approx. 3 min. Serve over hot fettucine. Sprinkle on fresh green onions and cashews.

Serving Size: Makes 8 good size portions
