Ingredients

    1 lb. uncooked medium shrimp
    1 lb. fresh Chinese pea pods
    1 tsp. corn starch
    1/4 tsp. ground ginger
    2 TB. soy sauce
    2 TB. dry sherry
    1/2 C. chicken broth
    3 TB. peanut oil
    1 clove garlic, minced
    1 can (8oz) water chestnuts, drained and sliced

Tips

To lower sodium, use reduced sodium soy sauce.


Directions

Remove shells from shrimp; devein. Set aside. Trim pea pods and set aside.
Mix cornstarch, ginger, soy sauce, sherry and chicken broth. Set aside.
Heat oil in wok or wide skillet. Add shrimp and garlic. Stir-fry over high heat for 1 minute. Add peas and continue to cook for 2 minutes, stirring. Add water chestnuts.
Stir in cornstarch mixture. Heath until it boils and thickens. Toss to coat all ingredients well, serve immediately over brown rice if desired.
