Introduction

This is a slightly lightened version of a Southern holiday tradition. Originally, it was cooked with hamhocks, but this is foregone for sake of reducing the fat content.

This is traditionally served as the first meal of the day with corn bread, but it is a great, simple, and protein-packed anytime.

Ingredients

    2 Tbls vinegar
4 cups water + as much as needed for crock pot fillage
    1 Tbls baking soda
3 cups Fat Free Chicken Broth
Black-eyed peas (cowpeas), uncooked, 1 Cup
    Beans, pinto, uncooked, .5 cup
Ham Steak, cured, boneless, extra lean, uncooked, cubed 8 oz
    Scallions, raw, .25 cup, chopped
    Garlic powder, 2 Tbls
    Olive Oil, 1Tbls
    Chili powder, .25 Tbl

Tips

If you want a vegan twist, simply omit the ham! Perhaps in the last hour, you might wish to add some rinsed long grain rice. Serve hot with a side of fresh, raw onion, radish, or some cooked spinach or vegetable greens. If you wish, you can add the greens directly into the beans in the last hour and a half for a more authentic Southern flair.

Directions

Clean all bad beans or stones from dry beans. Mix 1 Tbl baking soda (not included in nutritional calculation as it will drained and rinsed off), 1 Tbl garlic powder, with 4 cups water then add vinegar (again, will be drained and rinsed off). Stir. Add both types of beans. (Note: this mixture reduces the amount of gas the beans would otherwise produce, digestively speaking.) Keep in mind, soaking in baking soda increased the beans' salt content, so if you add the addtional salt, do so VERY sparingly.
Cover and set aside to soak for 4+ hours. Stir once in a while to circulate the water around the beans. Beans will plump up somewhat. Drain and rinse; put into crock pot/slow cooker. Add other ingredients. Add water to top serving line of crock pot. Stir well. Cook on high for at least 8 to 9 hours; the beans are done when they are soft but firm enough to barely handle stirring without breaking up. Reduce heat thereafter to prevent overcooking.
