Ingredients

    Rissoles:
    6 oz tuna in water
    1 oz grated onion
    3 tspn light mayonaise
    3-6 tspn white flour
    a pinch of fresh thyme
    salt and pepper to taste

    Pumpkin Chips
    7 oz firm pumpkin
    1 tsp sunflower oil to frying
    salt (hand made crystal salt)
    3½ oz green beans (fresh or frozen)

Directions

-The water presses out of the tuna and mashes roughly with a fork. The rissoles take best if there is not too much moisture in them.
-Add the grated onion, mayonaisse, flour to the fish and season with salt, pepper and thyme.
-Let the mixture rest 20 minutes.
-Form small rissoles with a spoon and fry them on a non stick pan until they are light brown and firm.

-Cut the pumpkin into thick french fries, and lay them on baking paper.
-Spread the teaspoon of sunflower oil over them and sprinkle a little crystal salt over them.
-Bake the pumpkin french fries at 225 c. in the oven until golden brown and firm on the outside and soft inside.
Boil the green beans until a pretty bright green (not over cooked.

Serve the tuna rissoles and green beans with a optional low fat dressing of your own choice.
