Ingredients

    4 Chicken Breasts, no skin
    Canned whole berry cranberry sauce, 3 cups
    Apples, 2 cup chopped
    Raisins, 1 cup (not packed)
    Walnuts, .5 cup pieces or chips
    Curry powder, 2 tbsp

Directions

Bake chicken for 30 minutes at 350 degrees Fahrenheit. While chicken is baking, mix together cranberry sauce, chopped apples, raisins, walnuts, and curry powder. Evenly distribute mixture on top of chicken. Return to oven for another 30 minutes. Serve immediately with couscous, noodles, or rice and with a green vegetable like broccoli, spinach, green beans or Brussel sprouts.

Serving Size: Doubled recipe makes 8 servings, 1/2 chicken breast each plus 1/8 of sauce and fruit from dish.
