Introduction

A great, quick, easy, and tasty quiche that's great for the whole family, whether they're watching their waists or not! A great, quick, easy, and tasty quiche that's great for the whole family, whether they're watching their waists or not!
Number of Servings: 8

Ingredients

    1 tbsp butter, salted
    1 medium onion, diced
    1/2 package frozen spinach (10 oz.)
    can use fresh baby spinach if desired, but
    cooking time will be longer to allow for the
    spinach to wilt.
    1/2 cup flour
    1/2 tsp baking powder
    1 1/3 cup non-fat milk
    3 large eggs (or egg whites--nutritional info based on whole egg)
    1/2 cup (4 oz.) feta cheese, crumbled
    1 10'' pie pan (or tart/quiche pan)
    you can also use a muffin tin to make mini quiches.

Directions

Preheat oven to 420-435 degrees (my oven works better at 435, yours may not need as much heat)

In a medium sized skillet, sautee onions in butter. While they are cooking, defrost your frozen spinach. When the onions are translucent, add the spinach to the pan. Mix together until onions and spinach are cooked through and smell wonderful.

While the mix is cooking, combine flour, eggs, milk, and baking powder in a large bowl until mixed well.

When the onion/spinach mix is done cooking, let it cool for a minute or two and then add it to the mix in the bowl. Combine until mixed well.

In a greased 10'' pie pan, add mixture and then top with feta crumbles before placing in the oven. Let cook for about 30-45 minutes. Keep an eye on your quiche so you don't overcook it! It's ready to come out when the top and sides are golden brown and the middle is cooked thoroughly (please don't eat it unless it's cooked all the way--raw eggs can make you sick!).
