Introduction

Ingredients

    1 chicken - roasted, skinned, deboned, and shredded

    2 cups grapes, halved - I like the red ones

    1 cup pecans, chopped coarsely

    1 cup light mayo

    1 tablespoon malt vinegar

Tips

When I'm in a hurry and don't feel like roasting a whole chicken I get an unflavored rotisserie chicken from the grocery deli.

Other nuts can be substituted. I just use pecans because we have pecan trees, so they're free.


Directions

Just mix it all up in a big bowl, serve with crackers or on toasted bread. The malt vinegar adds just a bit more flavor than the average ordinary chicken salad, makes it really pop.
