Ingredients

    4% ground beef, 32 oz (remove)
    *Canola Oil, 2 1tsp (remove)
    1 Med Onion Diced
    1 Medium red Pepepr Diced
    1 Jalapeno Peppers minced finely
    Garlic, 2 tsp (remove)
    Chili powder, 2 tbsp (remove)
    *Cumin (ground), 2 tsp (remove)
    *Kosher Salt, .50 tsp (remove)
    Pepper, black, .50 tsp (remove)
    Fat Free Sour Cream, 8 tbsp (remove)
    Medium Salsa, 8 tbsp (remove)
    1 1/4 cup Reduced Fat 4 Cheese Mexican,
    1 head Shredded Iceberg Lettuce
    *Tortilla Chips (Tostitos Baked Scoops, 1oz - 14 chips), 1 can Diced Tomatoes, Mexican Style, drained
    1 14.5oz can Red Kidney Beans drained and rinsed

Tips

I make meat mixture up and dressing and take to lunch just toss lettuce and cheese together and then add slightly heated meat and dressing at lunch time.


Directions

preheat large frying pan saute onion, both peppers and garlic add ground beef break down and cook until no longer pink add in all the seasonings continue to cook a few minutes add in diced tomatoes and kidney beans continue to cook until heated through. While the meat cools down shredd the lettuce place in large bowl add in cheese, mix together the sour cream and salsa add the meat and broken up tortilla chips to salad add in meat and dressing toss together.
