Ingredients

    Thomas Everything Bagel Thin - 1 bagel
    Athenos fat free feta cheese crumbled 2 tsp
    Cottage Cheese, Nonfat - 1/4 cup
    Eggplant, fresh, 2 slices of eggplant, peeled
    1/2 of tomato

Directions

Pre-heat oven to 425
cut two slices of eggplant and peel
place slices on bagel
top bagel with cottage cheese and the sprinkle feta cheese on top
slice tomato and place on top
and spices to taste (i choose chili powder, garlic, and oregano)
place in oven and cook till bread is golden
