Ingredients

    Ronzoni Healthy Harvest Whole Grain Pasta (Rotini)
    2 cans of Hunts Diced Tomatoes
    1-9oz. pkg Green Giant Chopped Spinach
    1 16oz pkg Chicken Sausage- Green Pepper & Mozzarella Cheese
    Frigo Shredded Parmesan Cheese
    1-TSP of EVOO

Tips

I have also added black olives, onions, broccoli, cauliflower and zucchini.
I also serve a nice salad with a balsamic dressing as a side


Directions

Saute Sausages in skillet with olive/cooking oil over a medium heat for 8-10 minutes until brown, after cooking let cool and slice into coin sized disc's
Cook Pasta in rapidly boiling water until cooked-drain pasta
in small sauce pan empty the 2 cans of diced tomatoes then add drained and dethawed spinach cook on medium heat until warm
in bowl toss pasta with olive oil, chicken sausage, diced tomatoes& spinach mixture
top with Parmesan Cheese and serve!
defrost spinach in a bowl of hot water until de-thawed
