Ingredients

3 cups baby spinach, washed and dried.
1 medium slice of red or sweet onion, seperated.
1/2 cup cucumber, sliced.
1/2 cup mushrooms, sliced.
1/4 cup tomatoes, diced.
1 tbsp ranch dressing ( or your prefered).
1/2 cup each orange and grapefruit segments.
1 egg, boiled.
2 slices bacon, cooked.
6 prawns (3 oz or 100g), pre cooked and peeled.
1 tsp olive oil
Tips
This salad serves one for dinner but add another skewer of prawns and a crusty baguette and it is an intimate dinner for two (especially if you add a glass of you favorite white wine).
Directions
Boil egg and fry bacon, set aside to cool.
Baste prawns with olive oil, skewer on bamboo stick then grill (keep warm).
Toss first 5 ingredients and salad dressing together in large bowl.
Arrange on serving plate with egg slices.
Sprinkle bacon on top.
Place orange and grapefruit segments around the edge.
Top with skewer of prawns.
Enjoy!
