Introduction

Ingredients

    1 c. pumpkin
    1 c. dark
    1.75 c. flour
    .5 c. sugar
    2 tsp baking powder
    1 dash salt
    2 large eggs
    .75 c. skim milk
    3 T. canola oil
    1 tsp cinnamon
    1 tsp nutmeg
    pumpkin pie spice for sprinkling before baking

Tips

Mine never take as long to cook as I think they will, but I have a gas oven. Just watch them after the 15-minute mark if you cook them that long.


Directions

Whisk dry stuff. Mix in wet stuff. Spoon into greased muffin tin. Sprinkle with pumpkin pie spice. Bake a 400 for 15-20 minutes.
