Ingredients

Bread, rye, approx. 12 slices
Red Ripe Tomatoes, 2 medium, sliced
Cheddar Cheese, 1 cup, shredded
Mushrooms, fresh, 225 grams, sliced
Milk, 1%, 2 cup
Egg Beaters, 1 cup (one small carton)
Basil, 1/2 tbsp
Thyme, ground, 1/2 tbsp
Garlic, 2 tsp or to taste, minced
Directions
Preheat oven to 350 degrees F.
Spray 9 X 13" baking dish with non-stick spray.
Layer half the bread on the bottom of the dish. Layer the tomatoes on top of the bread and sprinkle half the cheese over the tomatoes. Follow with another layer of bread, the mushrooms, and the rest of the cheese. In a bowl, whisk together the eggs, milk and seasonings until well blended. Pour the mixture slowly over the top, trying not to disturb the cheese too much. If you're worried about over-spill, place on a baking sheet. Place the dish in the oven and bake for about 40 to 50 mins. The dish should puff up a bit and the top should be a lovely golden color.
Any combination of bread and vegetables can be used. For meat eaters, add a layer of ham, turkey, or roast beef in the middle.
