Introduction

Wanted something taco-y, and also get that "fast food" feel. This is a pretty good approximation of Taco Bell's Mexican Pizza, only healthier. Obviously, leaner meat would make this even better, but I used what was on hand. Wanted something taco-y, and also get that "fast food" feel. Ingredients

    10 Corn Tortillas
    1/3 Can of Tomato Paste
    8 ounces Hamburger
    4 ounces Cheddar Cheese
    1 Cup diced onion
    1/4 Jalapeno pepper, diced ( I sued the seeds as well for more heat)
    Salt and Pepper to taste
    3 cloves garlic, minced
    Cilantro, chopped, to taste
    4 TBSP Scallions (green onions), chopped
    1 Tomato, chopped

Tips

You could add beans very easily to this recipe, if you'd like. Also could eliminate one of the tortillas for a tostada and less calories.


Directions

Spray skillet with cooking spray. Cook onions until soft, add garlic and hamburger, cooking hamburger until brown and crumbly. Salt and Pepper to taste. Add jalapenos and tomato paste, and cilantro. Stir well and cook about 2 minutes. .
Spray another skillet with cooking spray, place 1 or two tortillas in the pan and smear them around a bit, and flip. Add 1/5 of the cooked meat to the top of one tortilla. Add cheese, cover with second tortilla, flip. Cook about 1 or 2 minutes per side. Repeat with the other tortillas.
Top with diced tomatoes and green onions.

Serving Size: 4 "Pizzas"
