Introduction

This is a healthy, protein-packed salad that will knock your socks off! This is a healthy, protein-packed salad that will knock your socks off!

Ingredients

    3 cups romaine lettuce, shredded
    2 large hard boiled eggs, sliced
    3 slices turkey breast meat, cut into matchsticks
    1/2 red bell pepper, chopped
    1 tbsp red onion, chopped
    splash of cider vinegar (optional)
    4 slices low-fat cheddar, cut into matchsticks
    1.5 tbsp bacon bits
    2 tbsp light caesar salad dressing, store-bought
    Salt and pepper to taste

Directions

In a large bowl, mix romaine, red bell pepper and onion with the dressing, toss to coat. Add a splash of cider vinegar if desired, mix. Arrange on two plates, and layer eggs, turkey breast, and cheddar over lettuce. Sprinkle bacon bits over eggs. Season with salt and pepper as desired. Enjoy!
