Number of Servings: 44

Ingredients

    1 1/2 lbs shrimp, ez-peel
    1 block (12.5 oz) firm tofu
    2 Tbsp sake
    4 shiitake mushrooms
    2 large eggs
    1/4 c soy sauce
    1/4 c cornstarch
    4 green onions
    1 Tbsp ginger
    1 tsp salt
    canola oil for pan-frying

Directions

Precook chopped tofu in boiling water for 3 minutes, drain, then blot in dish towel to remove extra water. Combine all ingredients in food processor.
Form into small balls and pan-fry.

Serving Size: Makes 44 1.5" patties
