Introduction

Love this hearty banana bread made with whole wheat flour and ground flaxseed. I add craisins and mini chocolate chips. You can add nuts if you wish!! Ingredients

    4 Tbsp melted butter
    1 cup packed brown sugar
    4 eggs
    2 cups whole wheat flour (I use Whole Wheat Pastry Flour)
    1.5 cups unbleached flour
    1 cup Bob's Red Mill ground flaxseed
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 T cinnamon
    2 cups mashed bananas
    1/3 cup Craisins
    1/4 cup Mini Chocolate Chips


Directions

Mix dry ingredients together. Add wet ones including bananas, mix well. Add Craisins, Choc Chips, nuts (optional). Bake in 2 greased loaf pans for 50-60 minutes, until toothpick comes out clean. Cool in pans on rack for 10 minutes before removing from pans.
Makes 2 large loaves, 12 slices per loaf, 24 servings total.
