Introduction

I did not take this from a recipe, just put this soup together with ingredients I had left over after making a recipe from the 7 Day Cabbage Diet Soup I made earlier on in the week. Ingredients

    *1LB (12oz) 93% Ground Beef
    *1LB (12oz) White Mushrooms (Raw)
    *1 Medium Sized Red Onion
    *3 Stalks of Celery
    *1 Large Green Pepper
    *1 Small Head of Cabbage Cut into bite Size Pieces (Approx 4 cups)
    *2 1LB (12oz) Bags of Baby Carrots "Ready to Eat"
    *1 LB (12oz) Carton of Kendale Farm - Beef Broth
    *16oz of V8 Low Sodium 100% Vegetable Juice
    *1 - 28oz Can of Petite Diced Tomatoes (Great Value Brand)
    *2 Knorr Large Beef Bouillon Cubes, Beef
    *1Tbsp Garlic Powder (or more to taste)
    *1 Tbsp Sabor Latino Sazon Seasoning (to taste)
    *1 28oz Can (from diced tomatoes) of Water

    Cooking Spray or Best Life Buttery Spray for Cooking
    (Optional)

Tips

The leaner the ground beef the less fat.

Try substituting beef with Lean cuts of Chicken, Lean Ground Chicken , Lean Ground Turkey, Tofu or other non beef protein if you prefer.

Can make the same soup with Chicken using Chicken Stock and Chicken Bullion.


Directions

Pre-cook beef with a little bit of seasoning in a pan with a little bit of cooking spray (0 Calories, 0 Fat, Etc.) then in cut up all veggies into bite size pieces other than for baby carrots that come peeled and ready to eat can go in whole. Add cooked (Lean) Ground Beef, Onions, and Green Pepper into the crock-pot on High and cook with lid on until the onions and green pepper are almost transparent and tender. Add in the remaining ingredients adding in diced tomatoes, V8 juice and water last before any bullion or seasonings. Replace lid and allow to cook on HIGH for at least 4-6 hours or until all veggies are cooked to desired tenderness. Soup will thicken upon standing.
