Ingredients

1lb chicken breast, skinless
1 T. Pepper
1/2 tsp. salt
1/4 c. pomegranate juice
4 tsp. sugar
1.5 T. white balsamic vinegar
1 tsp Canola oil
8 c. spinach leaves
1/2 c. thinly sliced red onion
2 c. blueberries
1 c. crumbled blue cheese
Tips
Serving size: 2 cups spinach, 3 oz chicken, 3 T. Vinaigrette, 2 T onions, 1/2 c. blueberries and 1/4 c. cheese.
Personally I omit the red onion.
Directions
1. Heat grill pan or skillet over medium high heat. Coat pan with cooking spray. Cut up chicken into chunks and sprinkle with salt and pepper. Coat chicken with cooking spray and add to pan. Cook to desired doneness.
2. Combine pomegranate juice, sugar, vinager and oil in small bowl. Whisk until blended.
3. Divide spinach into 4 bowls. Arrange Chicken, onion, blueberries evenly over spinach. Sprinkle with 1/4 c. blue cheese.
