Introduction

Fabulously rich and moist loaf that is sugar-free! Fabulously rich and moist loaf that is sugar-free!
Number of Servings: 16

Ingredients

    1 cup pitted dates
    1/2 cup honey
    1 tsp bicarbonate of soda
    1 cup unsweetened apple juice
    1 cup grated apple (about 2 medium apples)
    1.5 cups self-raising wholemeal flour

Tips

Add some chopped nuts for added protein and deliciousness!


Directions

Place the dates, juice, honey and soda into a large pan. Bring to the boil and simmer two minutes. Cover and allow to cool.

Add remaining ingredients, combine well but do not overmix. Spoon batter into prepared loaf tin and bake at 180 celsius for 40 minutes.

Serving Size: I slice it into 16, but 12 slices makes it about 150kcal.
