Ingredients

3 chicken breasts
1 medium onion, chopped
1 Tbs oil
2 tsp cumin
2-2 1/2 cans chicken broth
1 can RoTel
1 can chopped green chiles
3 cans Great Northern Beans (do not drain)
3 cloves garlic, minced
1 Tbs cayenne pepper
16 oz reduced fat sour cream
4 cups Monterrey Jack cheese
Tips
The original recipe uses a crockpot. Precook chicken and shred. Saute onion and spices, then add all ingredients to crockpot for 4-5 hours.
The friend that gave me the recipe made these modifications: 1/2 can chiles, half an onion, 1/2 tsp of cayenne.
The original recipe calls for 1/2 tsp of salt - I didn't use it and I didn't miss it.
Directions
In large soup pan (I used my largest), cook chicken on low heat with oil. Either cut into small pieces in pan or remove from heat to cutting board and cut. Add onion, chiles, garlic, cumin and cayenne. Cook until onion is tender. Combine all ingredients except cheese and sour cream. Cook 1 hour at higher heat or up to 5 hours at low heat. During the last 30 minutes add cheese and sour cream.
