Ingredients

    1 10-16oz package of frozen spinach thawed(with moisture squeezed out)
    1 box of Whole Wheat linguine
    3 cups fat free Half and Half
    1Tbsp Unsalted Butter
    1Tbsp Flour
    1 large clove of garlic finely minced
    1 cup Fontina Cheese
    1/2 cup Mozzarella Cheese (part skim)

Tips

If you like more garlic, add another clove. One clove gives a mild garlic flavor.

To help bring down the Sat. Fat content, switch up the cheeses to no fat varieties and use a butter substitute.


Directions

In a large stock pot cook the pasta until desired tenderness. Do not drain.

While past is cooking, melt butter in a large skillet over medium heat. Add flour and cook for 1-2 minutes. Add garlic and cook for another minute. Add in cream and bring to a simmer, stirring frequently.

When cream has reduced and is heated through, about 7-10 minutes, add in cheeses and stir until melted.

Add in Spinach.

Add pasta into the skillet, reserving water, and toss until well coated. If sauce is too thick, add a half ladle of pasta water and stir until desired thickness.

Serving Size: Makes 8-10 1 cup servings
