Introduction

I found most gluten free breads to be too dense for me. One day I ran out of the all purpose flour and had to fill in with the other flours that were available. The results were so good that I adopted this recipe for my bread recipe. This bread is not dense, rises very well in a bread machine and is easy to make. Ingredients

    1 cup Bob's Red Mill GF All Purpose Baking Four
    1 cup Bob's Red Mill Stone Ground White Rice Flour
    1 cup GF Bisquick
    1 1/2 cup Silk
    3/4 cup Egg Beaters
    1/4 cup canola oil
    1 teaspoon cider vinegar
    1 teaspoon salt
    2 tablespoons sugar
    1 tablespoon xanthan gum
    1 tablespoon dry yeast

Tips

I've used whole eggs and it makes the bread just a bit lighter but was kind of inaccurate for the 3/4 cup measurement. It was either too little or too much depending on the size of the egg. I wrap my bread in a clean towel and then in a plastic bag then let it cool completely. This makes the outside crust easier to cut.


Directions

In a bowl, mix all the dry ingredients including the yeast.
Measure all the wet ingredients in a large cup measure or bowl. Stir wet ingredients well until completely blended. In my machine I pour the wet ingredients into the pan, then pour the dry ingredients on top of the wet. I use the gluten free setting with medium crust for a 2 pound loaf.
