Ingredients

    1/2 C Matchstick cut carrots
    1/3 C Chopped green onions
    2/3 C light coconut milk ( I used regular)
    1 TBS Soy Sauce
    1 TBS Rice Vinegar
    3 TBS Creamy peanutbutter (I used crunchy)
    1 tsp curry powder
    1/8 tsp ground red pepper
    2 C shredded Bnls Sknls Chicken breast (I used costco canned chicken - 2 cans)
    Flat out light wraps
    1 1/3 C packeaged angle hair slaw (I use a cup per wrap)

Good for a change to the normal sack lunch!
Only put amazing things in your mouth. :-)


Directions

Heat non stick pan
add carrots & onions saute 1 minute
Stir in coconut mile & next 5 ingredients
stirring constanly
Add chicken - cook 1 minute
Remove from heat & cool
Spoon about 1/2 c of mixture on each wrap top with agle hair slaw roll up, cover & chill.

Serving Size: Makes 4 wraps
