Introduction

Ingredients

3 small or medium golden potatoes (cooked)
3/4 tbsp Garam Masala
.75" ginger (peeled) and cut up
1/2 onion minced
1tsp salt (or more for taste)
.75 tbsp mustard seeds
1.5 cut medium red tomatoes (with seeds removed)
.5 cups of peas (cooked)
1tbsp turmeric
3 handfulls of spinach
Tips
Cayenne pepper can be added for spicy taste. Asafoetida powder (Indian stores) can also be added for more flavor. All of the spices can be added in different proportions depending on the taste you prefer. Other vegetables can be substituted with the same basic steps.
Directions
-Wrap the golden potatoes (already washed) in wet paper towels and microwave until cooked (not too mushy).
-cut up potatoes in big chunks
-in skillet, put olive oil, add spices, and some of turmeric
-add the garlic, ginger, and onions to the skillet
-when the onions start to brown, add the spinach
-as the spinach starts to cook, add the peas, potatoes, and tomatoes, along with the turmeric and salt
