Ingredients

    2 lbs Red or Fingerling Potatoes, Diced
    2 Stalks Celery, minced
    1 large Bell Pepper (or 1/2 a red, 1/2 a green), finely diced
    1/2 large Red Onion, finely diced/minced
    2 Hard-Boiled eggs, finely diced

    Dressing:
    1/2 cup seedy brown Dijon mustard
    1/4 cup Mayo
    Dash of Celery Seed, Celery Salt, and Cracked Pepper
    1 sprig Fresh Mint, minced

Tips

Watch the potatoes! I like to boil them in an asparagus steamer, where a removable basket lets me check the status of the cooking process, then quickly shock the potatoes with cold water when they are done cooking to prevent mushy potatoes.


Directions

Cut 2 pounds of red potatoes into a half-inch dice. Boil 10 minutes, remove, drain, and rinse in cold water to stop cooking. Add Bell peppers, Celery, Onion, and stir.

Meanwhile, combine ingredients for dressing until well-mixed. Add to the potatoes and veggies, and combine until evenly coated. Gently add hard-boiled eggs, and briefly stir.

Serving Size: Makes about 6 cups, or 12 half cup servings.
