Introduction

Since it's winter i figured it's soup - chili time! Today i whipped up a killer looking chili.. it's got all sorts of southwestern flavors and added a bunch of extra veggies! Most people associate just meat, beans and onion..then seasoning.. mmmmmaybe a bell pepper. Me? I like to put everything i can in it. think of it as a "garbage chili" if you will.. Browning seasoning gives this dish a "meaty" taste to it. Since it's winter i figured it's soup - chili time! Ingredients

    Ingredients:

    2 tbsp olive or canola oil
    3/4 cup Bulgar
    15 oz can chili beans
    15 oz can black beans
    15 oz can white beans
    15 oz can diced tomatoes (or use 2 fresh)
    1 medium onion chopped
    1 bell pepper chopped
    1 cup corn
    1 cup chopped carrot
    2 tbsp tomato paste
    1/2 cup chipolte salsa (i like frog ranch)

    Seasonings:
    2 tbsp sugar
    1 tsp Vegan Worcestershire sauce
    1 tsp black pepper
    1 tsp garlic powder (or 2 cloves fresh)
    1 tsp cumin
    1 tsp paprika
    1 tsp oregano
    1 tsp coriander
    1/2 cube "no chicken broth" + 2 cups water (or two cups prepared no chicken broth)
    1 tsp browning seasoning

Directions

In a deep stock pot add oil, onion, carrots, and peppers. Saute' until tender. Add the rest of the ingredients and simmer over low-medium heat till all ingredients are cooked and flavor is balanced.
