Ingredients

    1 large onion
    3 cloves garlic
    1.25 lbs lean ground beef
    2 cans diced tomatoes
    1 bell pepper (red, yellow or green)
    1.5 cups frozen or fresh corn
    2 - 14 oz cans kidney beans or 3 cups soaked beans

    Optional:
    1 Tbsp cumin
    1 tsp paprika
    1 Tbsp chili powder
    salt and pepper to taste

Directions

Chop onion, chop pepper into half inch chunks, and dice or press garlic.
In a stewpot, sautee onion, garlic, bell pepper and beef until brown. Drain any excess fat. Add undrained tomatoes and bring to a simmer. Add corn, drained beans, and spices (if desired) and simmer for half an hour or more. Add salt and pepper to taste.
