Ingredients

    1/2 cup whole roasted unsalted almonds
    1/2 tsp dried dill
    1/4 tsp smoked paprika
    1 1/2 to 2 lbs fresh rainbow trout fillets (4 small pieces of 2 larger ones cut in half)
    1 tbsp olive oil
    salt and pepper to taste

Directions

Preheat oven to 400 degrees F. Place the almonds in a food processor and run until finely chopped. Add dill and paprika and pulse until blended. Set aside.
Place trout on a parchment lined baking sheet. Brush with olive oil, season with salt and pepper and evenly coat each fillet with almond mixture. Cook for 15 minutes or until fishflakes easily with a fork.

    Incredible!
    Very tasty, and easy to prepare! I toasted raw pumpkin seeds, since I didn't have almonds, and it still tasted fabulous.
