Introduction

My husband and I love the soup. This dish is super easy and fast to make. Most of the ingredients are pantry staples. Top it with a dollop of reduced fat sour cream, it's delicious! Number of Servings: 8

Ingredients

    2/3 cups of each of the following (chopped); onion, red bell pepper, green bell pepper

    2 tsp. minced garlic

    1 tsp ground cumin

    2 1/2 cups of fat-free, low sodium chicken broth

    1 can (15 oz.) pumpkin puree

    1 can (15 oz.) black beans

    1 can (14 oz.) diced tomatoes, drained

    1/4 tsp of each; salt and pepper

Tips

Can serve with a dollop of reduced-fat sour cream to cut down heat.


Directions

Saute' onions and peppers for 5 minutes. Stir in garlic and cumin, cook for 1 minute. Stir in broth and rest of ingredients. Bring to boil; lower heat, cover and simmer for 5 minutes to blend flavors.
