Ingredients

    1 small head of cauliflower, riced (grated with a cheese grater)
    2 tbsp olive oil
    1/2 medium onion
    1 tbsp green onion
    1 tsp salt
    1 tbsp grated parmasan cheese
    2-3 cloves garlic
    salt and pepper to taste
    onion salt to taste

Tips

You can add a variety of veggies to this and make it a full meal if desired or try adding ham.


Directions

Cook onion and garlic in olive oil until soft, about 10 min. then add riced cauliflower (by grating cauliflower with a cheese grater) and cover. cook for 10 min. serve with grated parmasan cheese if desired.

Serving Size: makes about 2 cups (using a very small head of cauliflower)
