Number of Servings: 4

Ingredients

    Cabbage, red, fresh, 2 cup, shredded
    Leeks, 2 leek sliced thin
    Carrots, raw, 1 cup, grated
    Peppers, sweet, red, fresh, 1 cup, chopped
    Garlic, 1 tsp minced
    Pepper, red or cayenne flakes 1 tsp
    Basil, .25 tbsp
    Thyme, ground, .25 tsp
    Celery, raw, 3 stalk, medium
    Sweet Potato Raw Uncooked 2 small
    Diced Tomatoes and Green Chilies, 1.5 cup
    Vegetable Broth, 1 cup
    Soup, ONION, Mix, Dry, 1 packet

Directions

Chop, shred, and dice all vegetables be sure to soak the leeks in water to remove any sand that may be in them.

Spray a skillet with cooking spray and add carrots, cabbage, leeks(drain), garlic ,bell pepper, basil, thyme ,and red pepper flakes (Cabbage Mixture) and cook like you was stir frying them until tender set aside with lid on.

In a large stew pot add 4 cups of water sweet potatoes, celery, and onion soup mix bring to a boil until Sweet potatoes are tender and not over cooked then take a potatoe smasher and mash up the Sweet potatoes still in the pot retaining all the water then add cabbage mixture, tomatoe and green chilis, and vegetable broth return to boil and then simmer 10 mins.

    Very Good
    a bit unorthodox, but very good! i left out the onion soup mix and it turned out just fine. i'll definitely make this in the future. it's super filling and packed with veggies. - 1/19/08
