Introduction

A tasty dish which despite the title has no peas! A tasty dish which despite the title has no peas!
Number of Servings: 4

Ingredients

    2 tbsp olive oil
    8 spring onions
    3 smoked bacon rashers
    2 garlic cloves, crushed
    250g long grain rice
    200g can tomatoes
    3 tbsp chopped parsley
    2 bay leaves
    1 small green chili, halved, seeded, and thinly sliced
    1/2 tsp turmeric
    1/2 tsp cumin seeds
    1/2 dried thyme
    400g tin red kidney beans, washed
    375 ml chicken stock

Directions

Fry off the bacon, spring onions and garlic. Add the rice, tomatoes, parsley, bay leaves, chili, turmeric, cumin and thyme and cook for two minutes.

Add the beans and stock and bring to the boil. Cover and cook for fifteen minutes or until the rice is tender.

Serve with remaining parsley sprinkled on top.
