Ingredients

    1 pound skinless, boneless chicken breast
    1 pound yukon gold potatoes, diced
    1/4 cup fresh cilantro, chopped
    1/4 cup salsa
    1/4 cup shredded cheddar cheese
    2 tablespoons lime juice
    1 tablespoon extra virgin olive oil
    1 tablespoon melted butter
    1/2 teaspoon cumin
    1/4 teaspoon garlic salt
    Salt and pepper to taste

Directions

1. Preheat oven to 425
2. Toss potatoes with olive oil, half of the cilantro, cumin, and garlic salt. Arrange in the bottom of a 9x13" baking pan
3. Bake for 10 minutes in the preheated oven. Remove pan from oven, push potatoes to the outer edges of the pan, and arrange chicken breasts in the middle. Season with salt and pepper. In a small bowl, mix together the butter, remaining cilantro, and lime juice. Pour over chicken.
4. Bake for 20 more minutes in the preheated oven. Remove, top chicken breasts with salsa, followed by the cheese, and return to oven until cheese is melted. Serve.
