Introduction

Ingredients

    1 Tbsp Olive Oil
    3/4 cup Onion, diced
    3 - 5 clvs Garlic, finely diced
    2 cans Hunt's Fire Roasted Diced Tomatoes
    2 tsp Taco seasoning
    1 can Black Beans, drained and rinsed
    1 can Campbell's Condensed Tomato Soup
    2 cans Chicken Broth
    2 Tbsp Chicken base
    1.5 cups 1% Milk
    3 Chicken thigh (skinnless, boneless) cooked and cube

    Add to taste: salt, pepper, cumin, oregano, chili powder, garlic powder, onion powder, cayenne pepper.

Tips

Cut flour tortillas into strips and toss them in a preheated pan until they're crisp; add these to the soup. Additional soup toppings: cheddar cheese, sour cream, chopped onion, cilantro.


Directions

Heat oil over medium heat, add onion and cook until transluscent. Add garlic and cook just a few minutes more (don't let it burn!). Add tomatoes and chicken broth, then use immersion blender to puree. Add black beans and condensed tomato soup, and milk; stir well. Add chicken thighs and simmer up to 30 minutes, stirring occassionally.

This soup can also be made in the slow cooker by adding all ingredients and cooking until heated through.

Serving Size: Makes 10 servings of about 1 cup per serving.
