Ingredients

10 cups sweet potato, cut into 1 inch cubes
2 cups coarsely chopped onion
1 tbsp olive oil
3 tsp minced garlic
2 cups vegetable broth
6 cups chicken broth
4 tsp ginger root, grated small
grated orange zest from 1 small orange (approx 2 tsp)
3/4 tsp each ground cumin and salt
1/4 tsp ground black pepper
Pinch ground cloves
light sour cream for topping soup if desired
chopped fresh cilantro as garnish if desired
Directions
Spray shallow roasting pan , add sweet potatoes, onions, olive oil and garlic. Mix well, roast uncovered at 425 for 25 minutes. Stir once halfway through cooking time.
Transfer to soup pot, add broth, ginger root, orange zest, cumin, salt, pepper and cloves. Bring to a boil reduce heat to medium-low and simmer covered for 10 minutes.
Puree soup until smooth using a hand blender or blender. Serve hot.
