Ingredients

    1/2 cup low-sodium, fat free chicken broth
    3 tbsp. creamy peanut butter
    1 1/2 tbsp. honey
    3 tbsp. soy sauce, low sodium
    3 garlic cloves, pressed
    4 servings thin spaghetti (your choice)
    chopped green onions for garnish
    1 lime cut into quarters, for garnish
    chopped peanuts (1 cup)

Directions

Begin cooking chicken in olive oil with some red pepper flakes (optional), cooked through and chop. Cook noodles in water and in the meantime combine chicken broth, peanut butter, honey, soy sauce, ginger and garlic in a small saucepan over medium-low heat. Whisk until smooth and remove from heat. Toss cooked noodles and chicken with sauce and divide among four bowls. Sprinkle with green onions, peanuts and garnish with a lime wedge. Before eating, squeeze lime juice over noodles.
