This is also good with added garlic or black pepper.

You really need a food processor to get a good smooth texture. But, it still tastes good even if it's lumpy.

Ingredients

    1 head cauliflower, chopped
    2 tbsp butter
    2 oz Fage 0% Greek Yogurt (or sour cream)
    1 oz heavy whipping cream
    3 oz cheddar cheese, shredded

Directions

Boil the chopped cauliflower until it's soft. (Takes me 25-35 minutes, usually). Drain well.

Preheat oven to 375.

While cauliflower is still hot, dump half of the cauliflower into your food processor, with 1/2 of the butter, yogurt, & heavy cream. Blend until smooth.
Scrape into a pie pan or pyrex dish.
Repeat with second half of cauliflower, butter, yogurt, and whipping cream.

Sprinkle cheddar cheese over top of cauliflower & heat in oven for 10-15 minutes. Until cheese is bubbly & starting to brown.
