Number of Servings: 4

Ingredients

    1 14-oz can cut green beans (no salt added)
    1 14-oz can cut yellow beans (no salt added)
    2 cups canned tomatoes (no salt added)
    1/4 cup no fat plain greek yogurt
    1 tbsp dijon mustard
    2 tbsp fresh basil, chopped fine
    salt & pepper to taste

Tips

You can use blanched beans or fresh tomatoes.
Note: I couldn't find 'no salt added' canned vegetables on the ingredient list, so the sodium count in the nutrition info is higher than it should be.


Directions

Mix the yogurt, basil, mustard, and salt & pepper to make a dressing.
Drain and mix the vegetables. Add the dressing and stir to coat.
