Ingredients

    Brussels sprouts, fresh, 8 sprout
    Mushrooms, fresh 4oz pieces or slices
    Shallots 2 lrg
    Zucchini medium
    Coconut oil, 2 tbsp
    Balsamic Vinegar, 4 tbsp

Tips

keep lid off & mix frequently while caramelizing.

I usually have 2 servings of this in a bowl of baked acorn squash or top it off with 4oz of grilled chicken.


Directions

heat skillet or cast iron @ a medium/high heat & add:
Extra Virgin Olive Oil, 2 tbsp
Shallots chopped fine
Brussels sprouts quartered or chopped fine
Zucchini 1 inch quartered
Balsamic Vinegar
