Ingredients

    1 can Black Beans
    1 can Diced Green Chilis
    1 can Diced Tomatoes with green chili
    1 small jar pimentos or chopped red peppers
    1 cup water
    1 1/2 cups frozen corn or 1 can
    1 1/2 cups chopped onion
    1 packet taco seasoning, low sodium
    2 tsp ground cumin
    3 tsp chili powder
    1 tsp salt
    1lb Chicken Breast, boneless & skinless

Directions

Add all ingredients except the chicken to your crockpot and mix well. Lay the chicken on top and cook 3-4 hours on high or 5-6 on low. Once cooked, shred the chicken and stir into the mixture. It's really good on taco salads. If there is too much liquid stir in some cooked brown rice to achieve the texture you like.
