Introduction

Quick and easy yummy soup to warm away the winter chill. Converted a Cream of Broccoli soup recipe(substituted ground beef for broccoli and added creamy spicy cheese dip) for a hearty substantial dinner soup with only 9 p+. Ingredients

    1 sm. onion chopped
    1 lg. carrot grated
    1 lg. stalk of celery
    2 medium potatoes chopped
    2 cloves of garlic finely minced
    1 T butter
    3 c. beef broth
    1 c. nonfat milk
    salt and pepper to taste
    1 lb. ground beef cooked and crumbled
    1 cup of 2% shredded cheddar cheese
    6 T. of cheese dip (w/jalapeno)

Tips

For part of the milk, you could add some nonfat half and half for a creamier consistency, but the cheese sauce helps add to the cream texture.
A dollop of nonfat sour cream would be a nice addition as well as some crumbled tortilla chips on top.
I might opt to omit the potatoes next time and bring the calories down to 309 and the ww p+ to 5.


Directions

Melt butter in nonstick frying pan, add onions, carrots, celery and garlic and cook until softened.(3-4 mins)
Put these veggies in preheated Crockpot. Season the ground beef with the salt and pepper , brown and crumble in the same frying pan then drain well and add to the crock pot. The chopped/diced potatoes should be added next along with the beef broth. Set the timer for high, and cook for 3-4 hours. Add the milk and cheese heat through and serve.
